More Details
A full-bodied richly flavoured powerful Australian Malbec with generous robust fruit and soft gentle tannins with soft background complementary oak. A deep resilient colour is hallmark of this variety and vintage and underlays the powerful fruit flavours.
Fermented in open fermenters for 7 days before draining & pressing.
Oak treatment.
Aged in a combination of used French & American Oak 300 Lt & 220 barrels for approx. 18 months maturation prior to bottling 10th May 2006.
The longer oak treatment given is essentially used to soften the wine.
Potential aging for such a full-bodied wine 4-7years.
Food match.
Barbecued pork belly, Duck legs with Caramelized onion.
Winemakers Comments:
A great follow up to the outstanding 2002 vintage producing similar vibrant fruit flavours produced from this region. Pays to leave this wine breathe a bit lets this variety in particular fully open up.

Cabernet Sauvignon from especially the cooler Langhorne Creek area does take a little longer to mature so to enjoy the benefits of bottle ageing sit the wine down for a time to further enjoy the \\\"fruits\\\" of its development.

Light gold in colour with sweet fruit flavours on the palate displaying a distinctive freshness of harvested grapes.
Some apricot-like characters, mouthfilling and lucious with layers of more complex characters that integrate well. A relatively rich style with a subtle noble rot (botrytis) influence with refreshing citrus influences.

Vanilla-Cinnamon rice pudding, Fluffy Vanilla custards, Poached pears.

Our Chardonnay grapes were harvested on the 30th March 2005 and were grown on a TKT2 Trellis, a two-tier trellis ideal for the cooler conditions in the Coonawarra region.
This system allows sunlight exposure to the grape skins, which assists in ripening and helps flavour development in the berries.
The fruit was harvested under cool conditions and then fermented in stainless steel tanks before the wine was settled and clarified

The grapes were harvested in late April 2005 and fermented in temperature controlled stainless steel tanks undergoing primary fermentation before draining and pressing.
Further racking post malolactic (the secondary fermentation) then eventual
maturation in oak barrel.
OAK TREATMENT
Aged in 300lt barrels for approx 14 months the wine being filled to french & american oak barrels for maturation prior to bottling.

Butter Chicken, Shaslicks, lamb cutlets.
WINEMAKERS COMMENTS
Langhorne Creek Merlot fruit is ideally suited to this region with the cooling breezes of its coastal proximity retaining maximum fruit flavours.
