PREMIUM - 2003 BLEWITT SPRINGS
CHARDONNAY |
Our Chardonnay grapes were harvested on the 26th March 2003 and were grown on
a TKT2 Trellis, a two-tier trellis ideal for the cooler conditions in the Coonawarra
region.
This system allows sunlight exposure to the grape skins, which assists in ripening and
helps flavour development in the berries.
The fruit was harvested under cool conditions and then fermented in stainless steel
tanks before the wine was settled and clarified.
Tasting notes
Soft golden colour with tinges of green reflects a wine that has hints of lemon citrus
and pineapples. Very subtle oak treatment, 15% matured in new French oak barrel for
5 months has crafted a wine with real structure. The integrated fruit and delicate oak
flavours show finesse and will further develop in the bottle with hints of limes and
peachy stone-fruit.
Great dishes to enjoy this wine with:
Australian scallops with coconut cream, pomelo and lime.
Chicken with orange and basil sauce.
Atlantic salmon patties.
